Our Personalized Intimate Christmas Eve Dinner

Hello, everyone? How was your Noche Buena? As for us, it was fun, exciting and a little tiring at the same time.

On the eve of Christmas we went out and had lunch at Banana Leaf Apolo Restaurant with our Indian friends. This is not the same Banana Leaf that we have in the Philippines.
The food were really nice but they are too spicy for me. The only dish I was able to eat was the Chicken Tika. It is like a marinated roasted chicken.

After lunch we went to the store to buy some stuff for tonight and got home about 6:30pm. We are supposed to attend the evening mass but we are too tired and we haven't started our cooking plus we have not yet taken our photo for our Christmas FB-card.

It is now past 8pm and that was the only time we are able to start with our photo shoot. I never thought this was tiring because we have to repeat several times and go back and forth the camera.

Nope, this one is better.

Now, to work. We finished cooking as in few minutes before midnight. By 12, we're seated, inhaling and exhaling to relax and enjoy our simple yet intimate Noche Buena.

Things Lately Before Christmas

I have been procrastinating on blogging. Things caught up on me. Days before Christmas hubby and I were a little bit busy. Aside from the usual chores and stuff we had our nine-day evening mass or Simbang Gabi. And these are the things that happened lately:

Let Us Help The Kids Affected by Typhoon Sendong

Yesterday I posted on Facebook if we could also donate some toys for the kids so as to help them somehow forget even for a while the tragedy that they had. Today, I read the entry of The Filipina Mom Blogger about giving a hug to the children who had a traumatizing experience one could never imagine.

Here is an excerpt of her post:

Every Cloud Has A Silver Lining: How to help TS Sendong victims

Residents were caught unaware as the floods rose rapidly at around 2 a.m. Saturday, while they were sleeping. Many of the victims were recovered in mud.

When you hear this kind of news, one begins to ask is there a silver lining to all this? It may not be apparent yet but silver lining for the TS Sendong victims is collecting stuffed toys for the children and toiletries for the women affected by the wrath of Typhoon Sendong.
 You ask “not slippers, clothes, water?”..Yes they need all that too and I am sure everyone else is donating whatever they can. It’s good to feel empathy, post, forward donation centers and contact numbers — but it’s another thing to take action. The simplest would be to TEXT 2899 with the message RED (amount you wish to give 100, 200, 500, 1000) and the funds will go directly to Red Cross. There are a hundred ways to take action, and mine is collating credible sources of donation in kind and in cash.

My friend Cathy (my co-founder of our grief advocacy, The Compassionate Friends) shows another way. Let me explain first.


See, children in trauma experience a lot of nightmares. The power of a hug, or something that they can hug cannot be underestimated. I took part in Cathy’s project five years ago when she initiated the “Thousand Bears for Bicol Project”. It was also around Christmas time too. You cannot simply imagine the joy the children felt when they received these teddy bears.

Cathy contacted the Regional Missionaries of the Philippines -Northern Mindanao Region after she spotted a poignant poster of a father with his child on a friend’s wall. She took that as her cue. Under their wing in Cagayan de Oro and Iligan are thousands of displaced women and children. This is Cathy’s small way of helping out. This is something that she had done before which is to collect stuffed toys for the children in the evacuation centers and to put together toiletry kits for the women affected by Sendong.


How to donate to the children
Here are the simple guidelines :

1. For stuffed toys please send clean, friendly looking toys (no pigs please, owing to cultural and religious sensitivities) in any size ideally, big enough for a child to hug.

2. For toiletry kits, each bag will contain the following items : toothbrush, tooth paste, soap, sanitary napkins (10 pcs), comb or brush, underwear (2 pcs) face towel, laundry soap — just the basics so the women can also take care of themselves as they take care of their children.

Cathy plans to assemble the toys and goods throughout the holidays and deliver them to CDO just before the new year. She will need volunteers for drop off points in various parts of QC, San Juan, Pasig, Pasay, Makati, and Alabang. Let us all do our small share to help Northern Mindanao.

Every bear or stuffed toy that arrives matters because it counts towards making one more child happy. To share and to give is the true essence of the season.

The Handmade Burger

After meeting some friends over meryenda, hubby and I scoured through the basement of Raffles City to have dinner. Weekend is our break from fish and veggies diet. We're trying to be semi-vegetarian for health reasons. So we tried The Handmade Burger because it said that the patties are from 100% grass-fed beef. The sauces and dressings are all from natural ingredients. I forgot to ask if the lettuce, tomatoes, onions and all others are also organic. 

"Grass-fed beef has lower cholesterol, ten times more betacarotene, three times more vitamin E, and three times more omega-3 fatty acids versus grain-fed beef" - The Daily Green 

We were convinced so we tried it.


We tried their The Handburger Original. All burgers come with either salad, mushroom soup or potato fries.
Hubby opted with the salad.

And mine with fries.

This is the burger with a twist of onion jam on top.

After few bites with onion jam on it I decided to remove it. (Read: umay!) At S$13.8 I think it is worth it because the serving is big and the fact that the beef is organic. The buns were soft, the patty is real pure beef without the extenders or fillings. You could smell and taste the beefy goodness! The sauces were of good consistency, not too think nor watery, but lacks a little tangy flavor. The lettuce and salad were all fresh without that some dark parts caused by prolonged storage. By the way, the fries were also well fried not burnt, crispy outside and soft inside.

Over all the experience and the meal were nice but not to the point for me to crave for. But, I would still visit The Handburger nonetheless because the crew, from waiters to cashier, were all very accommodating and courteous. That for me, for us, is a plus factor.

My Attempt To Cook: Fish Fillet In Herbs and Tomatoes

This one is an easy and quick recipe. The only thing that bothers me about this dish is the fish, snapper. You can use other thick white fish if you wish... now that was a rhyme. I find the snapper's smell a bit off. The fishy smell is strong for me. So, what I did was drizzle it with lemon juice, pepper and little salt and let it sit for 10 to 15 minutes. Now, here's the recipe.


Ingredients:
about half a kilo snapper or any white fish fillet
2 tbs olive oil
2 medium onions, chopped
2 cloves garlic, minced
2 cups tomatoes
1/2 cup dry white wine or water or white rice vinegar
1/2 tb dried basil, chopped
1/2 tb dried rosemary
1/2 tb dried thyme
    *i used a readily available mixed herbs by Master Foods
1 cup black pitted olives (optional)
black pepper and salt to taste

Procedure:
1.  In a deep skillet pour in 2 tablespoons water then the olive oil. Add garlic, and cook until light brown. 
2. Stir in onion until soft and add tomatoes. Cook the tomatoes thoroughly until the juices have slightly evaporated. 
3. Add wine or water, simmer for about 5 minutes.
4. Add olives, salt, pepper and herbs; basil, rosemary and thyme. Cook for few minutes to blend the flavors.
5. Submerge fish in sauce and cook in medium heat until fish is tender and white, about 8 minutes.
6. Garnish with some basil or vegetables. 

Serve hot. This is nice with wine and pasta.

There's No Stopping Christmas!!

When I was quite young, December used to give me that certain sadness. I can't explain or understand why. Maybe the cold breeze? I don't know. But as I grew older, for the past years that I celebrated Christmas season in the Philippines it gives me both the feeling of happiness and rage. Rage because of traffic, taxi drivers charging higher than usual, crowded malls and restaurants and the all Filipino movies on the 25th of December until January 1. But, the happiness it brings is endless! Corporate gifts from business partners, several parties every week, Christmas songs, sale, gifts, friends, family reunion, the food, the food!! And the list can go on and on.

This year will be our first Christmas and New Year away from home. I don't know how our days would be but, hubby and I are planning to make it still special and romantic. This is the first time that we'll be spending the holiday season with just the two of us. So, while the homesickness is not yet striking us I will enjoy this merry days every chance I can get.

Out and about the city.

For the Church, there's the Advent season which I really love. Aside from the fact that the church is in purple, which is my all time favorite color, the readings and homily feel more meaningful and with so much soul. There is that desire for you to be good, make amends and more importantly love life for we are reminded that Jesus has come to give us salvation.

Whooaw!!!

On Dec 15 Abercrombie and Fitch store will be opening here in Singapore. In keeping with the A&F tradition for every new flagship store launch, men without tops greet the crowd. Wearing only red sweat pants, 40 models from different countries such as US, Germany, Japan, Italy, France, Belgium, England, Denmark and Spain lined up in front of the yet-to-open A&F shop along Orchard Road.
